Chia Pudding with Paleo Granola
This chia pudding is one of my favourite breakfasts. It is quick and easy to make the night before and you can also eat it on the go if you don’t have much time in the morning.
1/2 c chia seeds
1 1/2 c almond milk
1 tbs coconut nectar (honey or maple syrup is also fine)
1/2 vanilla pod, split and scraped
Mix the chia seeds, almond milk, coconut nectar and vanilla in a bowl. Place into an airtight container or jar and leave in the fridge overnight.
2 c of chopped nuts (I used 1/2 c of each- macadamias, cashews, walnuts and almonds)
1 c shredded coconut
Pinch of nutmeg
1 tsp cinnamon
1/2 c honey
1/2 c melted coconut oil
Dates or goji berries optional
Preheat the oven to 180°c. Mix all the dry ingredients together in a bowl. Add in the honey and coconut oil and mix in to the dry ingredients. Spread mixture onto lined baking tray and bake until golden brown.
Serve the granola on chia pudding, on top of a smoothie or by itself with fresh almond milk.
