Vegan Custard Tart

This vegan custard tart recipe is super creamy, delicious and is the perfect treat eaten warm or cool.

1 c almonds
2 1/3 c walnuts
1 c buckwheat groats
2 c desiccated coconut
20 medjool dates, pitted
2 tbs coconut oil
1/2 tsp pink Himalayan salt
1 tsp vanilla bean extract
Blend all ingredients in a high powered blender and blitz until the mix forms a dough. Press the mix into tart cases and refrigerate until firm.

400ml coconut cream
1 tbs rapadura sugar
1/4 c water
1/4 c tapioca
1 tsp vanilla bean extract
Whisk all ingredients in a saucepan over medium heat until thick. Spoon the custard into the tart cases and top with berries.
